It’s been awhile! I’ve been spotty on posting meal plans lately, some weeks because I don’t have more than a day or so planned, sometimes just because I am too short on time to post! Trying to be more organized this week, though!
Monday: shrimp tacos with tomato, avocado, lettuce (or leftover kale?). Artichokes. YUM!
Tuesday: potato, ground sausage and red pepper skillet dinner (can’t find a recipe, but I am going to saute/brown up the meat & some veggies, add cubed par-boiled potatoes and finish them off all together in the pan, then serve with shredded cheese or sour cream/sour supreme & ketchup), broccoli
Wednesday: Chicken and lentil stew (similar to this, minus, perhaps, the rutabaga, and adapted to be dairy free), green salad
Thursday: BLT’s and beet/snap pea salad like this if i am feeling adventurous (otherwise it will just be a bowl full of raw peas with a dip, which is pretty good too). All veggies from our CSA, woo hoo!
Friday: Leftovers or homemade pizza?
Saturday: Fish and chips with russet and sweet potato oven fries, and a salad or steamed veggie of some sort…
Sunday: Roast Chicken, glazed carrots, dairy-free popovers
