Here’s this week’s muffin tin lunch. It was (finally!) nice weather so the girls ate it outside on the porch at their little table. One thing I love about muffin tin meals is how well it can help with clearing out the little containers of leftovers that accumulate in our fridge. Hooray!
Egg salad, sliced carrots, sliced apples, buttered red potatoes, cheese quesadilla, milk
Everything but the potatoes went over well. My girls are not huge potato fans as it is — so as leftovers, they were definitely not popular. Alas.

Very nice, yummy looking tin. My kids don’t like potatoes (in any form – even french fries) either. I love getting rid of leftovers in muffin tin meals too!

Muffin tins are a perfect way to get rid of leftovers! I say that because I did the same thing. ;o) Heading to Chicago for a few days and I wanted things out of my fridge!
I love the muffin tin idea! My little guy only drinks milk for breakfast, lunch, dinner and snack, but someday!
